Chef Mischa’s Top Picks from the New Bo-Vine Menu

With our refreshed menu, we asked Chef Mischa what he’s most excited for guests to try. While there are plenty of reworked classics and clever new additions, a few dishes stand out as must-orders.
The Signature Steak
It’s Bo-Vine, after all - so let’s start with steak. Our signature Bo-Vine Fiorentina cut has been elevated with garlic chips fried in Wagyu fat and served under a smoke dome filled with applewood smoke. It’s rich, dramatic, and bound to be a talking point at the table. Alongside it comes our perfected jus - the result of more than 70 hours of testing, refining, and balancing to deliver the perfect depth of flavour.

Burrata Panzanella
An elevated twist on a Tuscan classic and one of the dishes Mischa is most excited about. Built on heirloom tomatoes and croutons, the dish is finished with locally made truffle-infused burrata from Cape Town. The burrata itself is a showstopper, with its creamy centre spilling out to dress the salad.
Cheesecake Ice-Cream & Honeycomb Affogato
This dessert has our chef very excited - a delicious treat that turns kitchen waste into something beautiful. Cracked cheesecake slices are churned into a creamy ice cream, topped with homemade honeycomb, and paired with a hot espresso pour. It’s playful, delicious, and very Bo-Vine.
Pork Ribs
These are not your average ribs. Slow-braised in mirepoix and red wine, the pork ribs are sticky, tender, and deeply flavoured - a new addition to the Bo-Vine line-up that Mischa is confident will become a guest favourite.
Seasonal Oysters
Oysters are back for summer, with a mix of classics and new accompaniments in the works. Expect plump, perfectly cooked oysters alongside fresh accompaniments designed to highlight their natural brininess.
